Sometimes we need simple recipes to bring us back to our roots. Trying to make the very best of complex recipes can make me overthink things and forget about simple foods like potatoes, carrots, and herbs. I needed something quick and simple for breakfast and this recipe was born. It was even more fun with purple potatoes and carrots. That may be the trick to get kids to eat their veggies, but it works for me too. :p Herb-crusted veggies are delicious and nutritious and a perfect side or staple for any meal.
