This recipe will not disappoint. This is the one my mom asks me to make to feed our entire extended family for Thanksgiving and Christmas. Mashed potatoes and gravy is our staple holiday food. If you can believe it, the recipe is also fat-free, sugar-free, and 100% whole food. It won’t make you feel heavy or lethargic like some of the foods I used to eat. Ain’t nobody got time for that!
After quitting meat, dairy, and eggs I found it hard to believe that I’d ever have delicious gravy again. Boy, was I wrong! Who knew mushroom gravy could be so meaty, savory, and jam packed with flavor?? One of the best parts of my diet is trying new things and finding that I have been missing out on so much.
Now lets talk about the main ingredient- mushrooms. Mushrooms are the only plant that contains vitamin D. So if you live in darkness all winter like me, this is a great way to get the D. Mushrooms are also a good source of B vitamins and minerals like Selenium, which helps protect against heart disease, cancer, and boosts the immune system. So now you don’t need an excuse to eat more gravy!
